Question on using Elk meat in chili. Can I make a straight substitute for ground chuck with Elk meat? Or, do I need to use a mixture of both? I'm concerned the Elk may be a bit lean and not have enough fat (yum!).
Also, will a chili recipe that uses ground chuck yield me the same results if I use Elk meat? Or, do I have to change the flavor/spice profile when using Elk?
Any thoughts or Elk chili recipes would be appreciated. Thanks.

Doing a quick search on goggle brought up pages of elk chili recipes. I have never used it for chili myself.CF

I use it as a ounce per ounce replacement and just love it. You can always throw in 30% beef chili grind if you want a little fat and that works well too.
