Hatch Green Chili Cheeseburger Time

Hatch Green Chili Cheeseburger time. And since my old standby went What-A-Chicago, I have made my own chili sauce.

Here is the recipe. It will downsize well by 3's

New Mexico Green Chile Sauce
Ingredients
1/2 cup light flavored olive oil
3 large onions finely diced
24 large cloves of garlic minced
9 lbs. green chiles roasted and finely diced
3/4 cup Masa flour
1 Tbsp. ground cumin
1 Tbsp. ground coriander
2 Tbsp. dried oregano
1-1/2 Tbsp. kosher salt, adjust to taste
3 qt. water
Directions
1. In a large saucepan, warm the oil over medium heat. Add the onions
and the garlic and cook, stirring frequently, until the onions are soft.
While this is cooking, stir together the flour and the spices. Sprinkle this
mixture over the onions and stir to coat.
2. Add 1 cup of water to the mixture in the pan and stir to make sure
the flour has dissolved. Add green chile and the rest of the water. Bring
to a boil and then reduce to a low simmer for 15 minutes. Use within 3-
4 days or freeze until needed. I pressure can mine. Enjoy

That looks delish, Mr. Mark, I had a friend that lived in Oregon and he always wanted me to ship fresh Hatch Peppers to him so he could roast and make Sauces and ETC. :tup:

Love hatch peppers. I have a brother in law that lives in Taos. Who used to live in Albuquerque and I loved going to the restaurants out there. Great food!

I look forward to this time every year. Had some hatch green Chile stew at blue goose the other day. It’s one of my favorites.

I too enjoy the hatch burger at whataburger but no matter who owns them I bet yours was 1000 times better. Thanks for sharing that recipe. Might have to give it a whirl

Love me some hatch chilies. Tis the season. Did 25# last year. Thinking I might scale it back to 10-15# but I’m sure when purchase time comes it’ll be 25#. :whiteflag:

What do you DO to them ? Sauce? Roast? ??????????

I roast them and then use them in sauces, sausage, Summer sausage, and whatever else trips my fancy.
