Sucklebusters Chili Powder

Postby tex_toby » Sun Mar 01, 2009 4:32 pm

My wife Krista and I cooked in a local backyard style chili cookoff a month or so ago and took 6th place out of 35 teams. I snapped this pic of her adding the Sucklebusters Chili Powder in. Mighty tasty stuff. Thanks, Gator! :D

Hey Gator....well, we came up with a recipe about 3 years ago and have done really well with it. We cook in 3-4 cookoffs a year and have placed in the top three or won about a third of the time. We have NEVER done bad, but lately we've been stuck just a bit further out than we want. I'm always up for some secrets if you are willing to share!

James/PT - yea, I married well out of my league! I'm still not sure how I pulled that one off. As for her cooking - well, I blame her for my being about 50#'s overweight! She's an excellent cook!

Most of my secrets are on the label, but a few things options as it relates to my printed recipe...

- I always use the stock from canned beans, 1 can per pound of meat. I use kidney and pintos and pour in the stock even if I dont use the beans later on.

- To beef up my recipe I add beef stock instead of water.

- I dice (super fine) all my veggies and let them melt away as they cook. The more veggies the better on my recipe. Just allow plenty of cook time.

- A couple of tablespoons of your favorite pepper sauce at the end always helps.

- Add 1 tbsp of mustard per 2 lbs of meat.

Good luck, sounds like you got a winning recipe already! 8)

Looks might cold at that cookout, Tex. Not often you get to see someone shielded from the wind, but wearing gloves to cook chili! Good on you two for toughing it out. Look forward to seeing those trophies pile up now that Sucklebusters spices are on your team.

That was a really cold and windy day. The actual temps were right around freezing, but the wind was blowing about 25mph too, so the wind chill was down in the teens. We had set up the awning the night before in anticipation of the cold front blowing through in the night, but intentionally left the walls off so it wouldn't take flight. That morning, it was downright miserable until we got the walls put on. After that, it wasn't too bad. We just didn't mingle much that day!

Not sure if you guys are familiar with Brian Burns or Tommy Alverson, but they both played that day at the cookoff. They are both excellent Texas Country Music artists if you are into that sort of thing. :D

Got introduced to them through Gary P. Nunn and Larry Joe Taylor, actually. Really like Tommy's stuff. Don't forget about Guy Clark!
