Triple Threat BBQ Sauce question

Hi all,

In recent testing some of the feedback was that the sauce got hotter after several weeks in the fridge. I used cayenne for the heat factor - have you noticed this issue? I thought cayenne was pretty stable and only changed after cooking it.

Comments / Suggestions?

Dunno what to tell ya... I wasn't on the tasting panel... :cry:

I have several bottles of commercial hot sauces and the like that contain cayenne. They seem to be stable and consistent on the heat profile over time.

I've noticed that occasionally with bottles of salsa, but we're talking *months*. As far as a BBQ sauce or other foods, not really.

Were these folks sensitive to heat levels? I like hot foods, so I might miss an heat increase that would kill my son.
