Decided I was hungry for some ham. So, dug a cooked ham out of the freezer and proceed to do a SuckleBuster's Pecan Smoked Ham for Christmas. I did something that's strange for me, I went straight by the SuckleBusters recipe, except for a very light coat of White Lightning on the ham.
Rubbed and Glazed, ready for the smoker
Loaded into the Little Red Box and starting
Done smoking and time to rest
And here it is plated

Beautiful seem to be the correct word for that nice creation, Mr. Mark

Looks fantastic.... I have the Pecan Rub but where is this "recipe" you mention? Checked the website and didn't see anything about ham.

SuckleBusters Honey Pecan Smoked Ham Recipe
8 – 10 lb. Spiral Sliced, fully cooked ham
Honey Glaze:
1 Cup Pineapple Juice
½ Cup Brown Sugar
½ Cup SuckleBusters Honey BBQ Sauce (or substitute Peach BBQ Sauce)
Whisk these ingredients together over medium heat until it reaches a low boil. Reduce the mixture for 3-5 minutes stirring occasionally.
Sweet Pecan Rub:
¼ tsp Nutmeg
¼ tsp Cloves
1 tsp Cinnamon
1 tsp Ginger
1/4 Cup SuckleBusters Pecan BBQ Rub
1 Cup Brown Sugar
Combine these ingredients in a bowl, cover and shake until well blended.
Directions:
Place the ham (large end down) on a wire rack in a shallow sided aluminum pan. Brush on a generous amount of the BBQ glaze using a brush. Next, cover the outside of the ham completely with the Sugar Rub.
Cook the ham on a grill/smoker at approx. 275 degrees cooking temperature.
HINT: If using wood chunks or chips - select pecan or other fruit woods for a mild smoke flavor.
Reapply the BBQ Glaze every 30 minutes to 1 hour or when the ham begins to look dry.
Use a thermometer and cook to an internal temperate of 140 degrees.
HINT: Cooking time can vary but it should be ready in approx. 2 – 3 hours. Do not over-cook or the ham will dry out, remember this is a pre-cooked ham, so you only need to warm it in order to cook the glaze and rub.
HINT: When the ham is ready, the slices will start to separate slightly and the outside will have a crusty look.
Remove the ham from the grill and let it rest for a few minutes before slicing. Serve and enjoy!
