Coffee rub?

Postby gogo14910 » Mon Jan 11, 2010 1:20 pm

I've been looking at some of your recipes for rubs. Why in the world would someone use coffee grounds in a brisket recipe? Is it much? Is it to complimet a hot cup of Joe?! Can someone explain the flavor that provides??

Using coffee in a rub goes back to the old cattle drive days I recommend that you try it on a steak sometime.[(1 tbl k- salt, 1 tbl fine ground coffee,1/2 tsp blk pepper( table grind),1/2 tsp onion powder, 1/4 tsp ancho chili powder.)] mix together and rub onto a nice steak with a little canola oil. Grill over hot coals 5-600 deg 3 min per side.
I also use Black coffee in my brisket injection. The flavor is amazing and the acid in the coffee is a natural tenderizer.

Dittos on the Coffee Rub -> I'm planning on making some coffee rub this year sometime. Coffee and Black Pepper make a nice combo.

;)

Im wondering if there is merit to trying instant coffee vs regular? Anyone have a bead on that?
