Fried Pickles?

OK... a guy at work mentioned that he loves the fried pickles (yuk!) at Hooters (yuk again!). He said that he has talked with Hooters and watched them and all that they use are pickles and flour then drop them in hot grease for X amount of minutes.

He says that when he tried is at home, very soon after the breaded pickles hits the grease, the batter falls off. He was asking me how to keep this from happening. Not positive, but I think that he is using a deep fryer.

I told him that I wasnt sure, but I am thinking the grease may not be hot enough.

Any ideas? He's not looking for recipes, he just wants the batter to stay on the pickles! :lol:

My guess is it's a flour batter, which will hold to the pickle better. He can also pat the pickles dry with a paper towel before rolling in the flour, this will help too.
The ones I had in a restaurant were in a batter like fried mushrooms.
The ones we make are rolled in a batter and don't have any problems with it falling off.

I think your supposed to beat some eggs and dip the pickles in there first to help the flour stick.

Mix eggs and milk, dip pickles in mixture, then roll in flour

Fried pickles are good! If your not using a batter like OSD mentions, like for fried shrooms, then flour, egg wash and then flour again.

Fried pickled jalapeno pepper slices are mucho good too... use ranch for a dipping sauce and even my kiddos will eat'em up.

What JB said but let them set several minutes after flouring before cooking.

Like I said, he told me that Hooters uses only flour but I will pass all of this info on to him and see what he says.

tell him to do pickle chips rather than spears they are allot better the fried pickle spears get soggy and you have to use a thick nasty batter .I couldn't believe it the first time I ordered fried pickles and got spears they do not compare to chips I can't believe any restaurant with a cook that has ever tried fried pickles would even serve the fried spears.

Made some this weekend. I put the slices on paper towels for awhile. I had a large bowl with Zataran's fish seasong (flour, not corn meal). I put the pickles in, shook it up, and let them sit for about 3 or 4 minutes. deep fried them and they turned out great!

There is a hot dog stand in my town that sells them and from what i hear they are Fantastic. I guess there isnt much fried food that i Dont like, LOL

2 Ways

Cut dill's in half first
Using a wet batter* with dill pickles -THAN dip them in plain flour then you drop them in very HOT grease or
Deep fry
*Wet batter-one made with beer or any favorite wet batter -Seasoned

or

Take dill pickles slices - dip into buttermilk- then into SELF RISING flour. Fry in med-high heat until golden brown.
or deep fry them
A mistake is sometimes a great creation
