Salisbury Steaks

Ok, odd request here.. what else is new, right? 8)
My hubby loves those Stouffers Salibury steaks. How would you all go about trying to replicate them? I know they are probably mostly ground beef, but if there are any other cheap cuts of meat you would use, let me know.

I'm thinking seasoned lean ground beef with a little instant mashed potatoes for some binder or filler. Maybe add some fine diced onion and pack the patties very firm. For the gravy, a good brown gravy with onion in it to cook them in. :D

ok, would you sear them first and finish in the oven or low on a skillet on top of the stove, or what?

I would sear them first. Then in a skillet on low with a lid on it. I would think the oven would work on low too, but I think I would really rather do the skillet way better.

Another thing I was thing about, but don't know how much you would use is for seasoning the meat maybe use dry onion soup mix.

One recipe request turns into a history lesson.

I poked around, and the term Salisbury was injected to the term "hamburger steak" during some hard times of the past.

Its in essence meat loaf by the slice.

OSD nailed it. Onions and filler is common.

Its a delicacy in Japan.

That is truly funny, Bill, because the hubby HATES meatloaf! :lol: Maybe it's the ketchup thing vs. brown gravy.

Yep my mom just basically did the meatloaf recipe but made them into steaks. She was a well known restaurant cook in my hometown.

This one is our favorite. Haven't tasted another that even comes close.

Salisbury Steak Recipe
from Campbell's Soup cookbook, "The Creative Cook"

6 servings

1 can (10 3/4 oz) Condensed Golden Mushroom Soup
1 1/2 lbs. lean ground beef
1/2 cup fine, dry bread crumbs
1/4 cup finely chopped onions (I substitute a good shaking of onion powder)
1 egg, slightly beaten
1/3 cup water

Measure out 1/4 cup of soup and mix with the ground beef, bread crumbs, onion and egg. Shape into 6 patties. In pan, brown patties on both sides and pour off fat. Blend in remaining soup and water. Cover and cook over low heat for 20 minutes or until done. Stir occasionally. Also--I sometimes have to add a bit of water along to keep the gravy from evaporating too much.

Laura,

I make smothered steak using cutlets, seasoning - lightly breaded then pan fried, saute a medium onion in the drippings + add everything to a crock pot plus a can or two of cream of mushroom soup and cook for several hours. It comes out great everytime...

Know they one of favorite foods when done right. Otherwise it just a hamburger patty. Now I aint never got Salisbury Steak cornfused with Smothered Steak like some I know around here:) They hosses of different colors so to speak. Now yall want to talk about smothered steak my Grandma made the best (course she was a total exspurt cook like most all housewife type ladies from her era). She would brown up untenderized round steaks in a skillet..add a little water and flour.. seasonings..onyawns etc. Put a lid on it and stuck it in the oven. So good it make a person want to slap somebody's Mama.
