I need a good Fattie recipe

I never have cooked a fattie, but I want to soon. Any of you have a good recipe? Also, how thin do you pat the sausage before adding the other stuff and rolling?

In the purest sense, a roll of Jimmy Dean original, no stuffing, rolled in a good rub (Like Hog Waller). You can get fancy and stuff 'em cheese, onion or what ever else floats your boat.

I'm doing some mini fatties for a get together tomorrow nite. Home ground pork that I tossed a canned chipotle in the grinder as it went. 5 Peppers total, about 3# of shoulder.

Let your imagination run wild here.

I like to use Jalelps and cheese in mine, but mushrooms, any other peppers, I have used hardboiled eggs, scrambled eggs.

I have also finished smoking, then placed a dough around them and put them in the oven to cook that...

Stan even if you do one straight out of the wrapper you will be amazed at how good it is.

Looked at your slide show. I think I will try your ingredients for my first one.
Seems like they would be good with scrambled eggs and fried potatoes inside the fatty.

Are Fatty's usually a breakfast food? A main course? Or a snack?

They come in handy if your Q is taking a little longer than planned and you have hungry folks giving you the eye 8) They also make good finger food for parties where you're asked to bring a side. I've never served them as a main course but nothing saying you couldn't.

The ones I'm doing this weekend will be a departure of sorts. I ground up a bunch of pork shoulder and tossed canned chipotle peppers into the grinder along with garlic cloves and onion between pork chunks. Becareful with the peppers as one had a bunch of adobo sauce in it and when it hit the blade shot chipotle sauce 4' and hit the Mrs. in the shoulder while she was sewing :oops: :lol: .

The plan to make astoroid shaped mini faties stuffed with chedder. I added salt, cumin, cilantro and tad of sugar to the mixture after it was ground the 2nd time (course blade on both grinds). Fried a little patty to check the taste.....they do have a bite :angryfire: :D If they turn out as planned maybe I'll them Anti-Matter Asteroids (AMAs) :lol:
