Burnt Ends Question

I have never made burnt ends but I'm really wanting to do them. Especially when my good friend from S. C. comes to visit next month. We both know that this will ?probably? be the last time we get to do this so I want some special things to remember in addition to the "kuss'n and diz'cussn" we'll be doin. I want to plan a small gathering also with some of "OUR" friends from back in the "daze" one day so snacks will be mandatory.

I've seen post with these made from Brisket and also from Bacon and I'm not wanting to cook a whole brisket.
THEREFORE what do Y'all suggest for a couple of old remenissers to chomp and visit with ?

Pork Belly gets my vote Emm.
More forgiving and a lot less time than a Brisket. Do it right and the flavor is off the charts.
Plus, not as much $$$ either.
If ur interested in how they were done the Poco way let me know.
Nobody threw any away and they were gone rather quickly so I took that as my tastebuds weren't lying to me.
