I have found that most dinosaur legs are best when pressure cooked first before doing a nice sear for grill marks. Serve them with toast points and soft scrambled dodo eggs for the win.

Cut the tendon like a frog leg. With that nail you don’t want that thing jumping out of the pan! :)
