What do you guys like to stuff into a "fatty"?

I've seen potato tots, peppers, cheese, onions..what else is good snuggled in there?
Also, do you like to blend pork sausage with hamburger or is straight or straight with seasonings added cow the way to go?

Just the breakfast sausage for me. Jimmy Dean Maple is mighty fine plain or stuffed.

I like stuffing with:

1) Start with a layer of spinach, then
2) Something crunchy - cashews, almonds, apple, or other
3) Something spicy - jalapeño or other
4) Something gooey - cheese you like
5) Something sweet - mandarin slices, peach preserves
6) Add some rub on the inside

Then roll it up tight and rub

Use clear wrap and roll it to get it tight

I will soon be doing my very "FIRST" one also and it's very small at 3lbs so I'm going to do mine this way https://www.youtube.com/watch?v=mRax2g5XaD0 .

I am also going to use Peppered Bacon with this Recipe.

Thanks, Egg, and ?FWIW? my chunk of meat is a Loin - think I'll go stand in the corner for a while

We put scrambled eggs, onion and bell pepper. Using bacon and breakfast sausage. The next one I do will have potatoes and cheese inside and over easy (or oogey as my kid calls them) eggs will be served on top.
