Candied Pecans

Postby copkid » Wed Nov 21, 2007 1:55 pm

Hey all! I want to put some praline or candied pecans on top of my sweet taters for tomorrow, but am not having much luck finding a good recipe! Any suggestions are welcome!

Here ya go Laura. I used to make these (also walnuts and almonds) and sell them on my concession stand. I can't find my recipes but this one is close. A word of caution there is a very fine timeline between roasted to perfection and burnt pecans so keep your eye on them they get very aromatic at peak perfection. Almonds and walnuts are more forgiving but not as popular.
Other spices that are good allspice, nutmeg, cardamom and orange zest. Also if you use the fine ground confectioners sugar (but not powdered) they come out better.

Sounds good Papa! Are they really spicy? I could handle it, but tend to have weenie family members! Could I throw some brown sugar in there as well?

No they are not overly spicy loved by all, disappear quickly. Especially good before dinner if you want a lot of leftover dinner.

Well notice that hero line sorta blank looking:) Was it Abraham Lincoln? No no..got to be Ben Franklin. He was a purty smart feller. Drinking a toast to you and Ben as we speak.
