Plow disc cooker recipes needed

Anybody else that cooks on a disc feel like sharing some recipes? I'm ready for a change from the standard fajitas and breakfast burritos. Not that any things wrong with those…

Try chicarrones, carnitas, or tripas. All can be done in the "disco" plow disc.

Southwestern Brats in the disc cooker~
Adjust ingredients based on number of folks eating
Brats
Onions
Green Bell Peppers
Mushrooms
Green Chile (diced or chopped
Seasoning
Olive Oil

Cut brats, onions, bell peppers, mushrooms and green chile
Add small amount of oil and cook brats until browned
Add onions, peppers, mushrooms and green chile
Season - Garlic Pepper
When done serve with favorite side dish and/or buns


~Vegetable Turkey Chicken Spicy Stir Fry
Adjust ingredients based on number of folks eating. Fresh veggies for best results- 10 adults

Beans
Asparagus
Onions
Green Bell Peppers different colors
Squashes summer and Mexican Squash which is sweet
Zucchini
Mushrooms
Brown Rice
Chicken or Turkey
Szechuan SPICY Stir Fry Sauce

Pre-cook some brown rice and *poultry strips or use shrimp. (for raw poultry or shrimp add with the olive oil an cook beans below
Cut all veggies and chicken (bite-size
* On disk - add generous amount of olive oil and cook beans, asparagus, onions and green bell peppers to your consistency. These take a bit- may look BIG but these cook down in size.
Stir in a helping of Spicy Stir Fry sauce
Add squash, zucchini, mushrooms, brown rice and chicken and season to taste stirring frequently. Stir in a helping of Spicy Stir Fry sauce
Disk Fried Catfish
Adjust ingredients slightly based on number of folks eating.
Vegetable Oil, Olive Oil, or Butter (your choice
4 medium freshwater catfish fillets*
1 cup cold milk
1 cup yellow cornmeal

2 to 3 teaspoons salt
1 teaspoon freshly ground black pepper
1 teaspoon red (cayenne) pepper
Lemon wedges

* To clean a whole catfish, remove skin from the catfish, slice fillet across to a thickness of no more than ¼ inch. The secret to frying catfish is using thin fillets less than ¼ inch thick.

Rinse fillets under cold water -dry thoroughly with paper towels.
In a pie place, lay fillets and pour milk over the top. In another pie plate,
combine cornmeal, salt, pepper, and cayenne pepper.
Remove fillets one at a time from the milk and roll in the cornmeal
mixture to coat evenly; place on a large platter to dry. leaving space
between them. Let dry at least 5 minutes.
Heat oil or butter in the disk (Never use more heat than needed. Add he coated catfish filets and cook 5 to 7 minutes on each side, sprinkling additional salt on catfish after each turn. Cook till golden brown and fish flakes easily with a fork. Drain on paper towels. After draining, place fillets on another platter covered with paper towels; place in preheated oven to keep warm while frying the remaining fillets. The fillets will remain hot and crisp as long as 35 minutes. Serve with lemon wedges.
4 servings.

Fajitas, Carne asada, Stir fried anything, Chicharon, Fried Chicken.
Never met a cow I didn't like with a little salt and pepper.

Funny you posted the brat recipe. Did something similar Friday night & it was tasty.

I just made a Chicken a la Mexicana dish on my disc cooker the other night that was excellent!

I just made up a recipe but here's what I did:

I took 2 pounds of chicken breast tenders (seasoned and then cubed them up)
1 large can of Hunt's tomato sauce
1 can of diced Rotel (I used the spicy habanero style)
2 cans of Hunt's diced tomatoes (drained)
4-5 jalapenos (I just cut them into slices - and I left the seeds in one of them)
1/4 clove of garlic chopped up
I white onion chopped up
Chopped cilantro (as much as you want really)
2 tablespoons chili powder

I took all of those ingredients and threw them into a mixing bowl and stirred it all up.

Once the disc was nice and hot, I poured everything on and started cooking it.

It shouldn't take too long either. I think everything was cooked up in like 10-15 minutes.

Once done, just take a tortilla, put a little Spanish rice in the bottom of it and scoop the chicken dish on there. It makes a nice tender chicken taco.

That sounds good. My disk has a date with the angle grinder. I need to get it polished and re-seasoned so I can use it again.
