Smoked Turkey Legs
This Thanksgiving, I am gonna try to smoke some Turkey legs, but I dont know how long to leave them in the UDS, also if yall can help me with a recipe I can use, I saw some online but I dont know.

Do a basic brine on the legs for about 16-24 hrs ... rinse with water and pat dry and rub down with some Sucklebusters Clucker Dust or Hoochie Momma. Smoke til the internal is at about 165F and pull.

I pull the breast at 165 but take the legs and thighs to 180-185. Hoochie Mama rocks on poultry.

I agree with the above but I also always cure the legs, I like the hammy taste and texture.
Just replace the salt content in the brine with Tender Quick.
Also after brining you might want to clear water soak them a bit to reduce the salt content especially if you are going to use rub.

A good friends dad used this brine, and smoked the best turkey legs I've ever eaten.
1 gallon water
1 cup kosher salt
3/4 cup brown sugar
2 tbs garlic powder
2 tbs onoin powder
2 tbs red pepper flakes
2 tbs cajun seasoning
2 tbs tabasco
1 tbs poultry seasoning
