Looking for Recipe for Smoked Turkty Legs

We are having a birthday party for our granddaughters with family and friends. I am looking for a good recipe for Smoked Turkey Legs.

OK here ya go:

1 gallon water
3/4 Cup Tender Quick (or 3/4 C Morton's Sugar cure or 1/4 C Cure #1 and 1/2 C non iodized salt)
1 Cup brown sugar
2 T poultry seasoning

Make a tea with the poultry seasoning by mixing it in a cup of hot water
Mix all ingredients together until all are in solution.
Bring the brine temperature down to 40° or a couple degrees less. If you do this with ice be sure to account for all the water in the 1 gallon.
Immerse the legs in the brine overnight (a big zip lock bag works well) be sure they are all covered.
Remove from the brine and rinse lightly and air dry a bit.
Smoke at 225° until done.

Note: You need do nothing else and they'll be crowd pleasers but if you brush with oil lightly before going into smoke they will be pretty.

I've been wanting to smoke some turkey legs myself, but don't know where I can get them. Any ideas?

Occasionally I see them in Krogers. Ask the butcher guy about them.

A buddy of mines dad used this brine. They were outstanding. Best turkey leg I've ever had. I wouldn't mind doing a whole turkey this way.


1 gallon water
1 cup kosher salt
1 cup brown sugar
2 tablespoons garlic powder
2 tablespoons onion powder
2 tablespoons red pepper flakes
2 tablespoons Cajun seasoning
2 tablespoons Tabasco hot sauce
1 tablespoon poultry seasoning
olive oil
extra Cajun seasoning
Custom vertical offset.

1. Buy raw turkey leg
2. Drive to Port Aransas
3. Buy crab net
4. Drive to fish pass
5. Tie turkey leg to bottom of crab net.
6. Throw crab net into fish pass, remembering all important step of holding on to tether rope.
7. Haul in crabs until cooler is full or turkey leg is picked clean, whichever comes first.
8. Haul crabs back to cheap hotel kitchenette.
9. Fire up pot of boiling water over gas stove, toss in some Old Bay seasoning. After hitting a hard boil, toss in crabs until cooked red.
10. Extract crabs, crack and eat with melted butter,squeezed lemon juice, saltine crackers and cold Pilsner beer while watching sun set.
11. Thank your respective deity of preference for making crabs like turkey legs.

Sounds like a good brine! Substitute the water with apple cider and you will be even happier! :D
