Smoked/Grilled Salmon

My wife bought a couple of nice slabs of salmon at the store today. I've done catfish and white bass on the pit before but never salmon. Anyone have a simple recipe? Can it be done the same as catfish or bass? I want to keep it simple so I don't screw up some good fish.

My preferred is salt pepper seasoning then grill it. I like a high heat sear then finish indirect. For me if you finish Salmon till flaky it is dry so I take mine off before the flesh is flaky.

When the pellicle forms (starts sweating) I glaze with 50/50 maple syrup/butter

Any fruit wood works for smoke but I go light.
A light dusting of your favorite rub would work.

This is for a next time grilling or bake or frying

Squeeze fresh lemon over salon in skillet- pan or on grill. If skin on skin side down in tiny bit of olive oil n butter- sprinkle with dill, or little basil. Cook till flaky.

If want little tasty .. Make a sour cream mix with either horseradish or wasabi paste to your liking with touch of salt n garlic glandular n lemon. Spread over salmon n let sit about 30 minutes before cooking or uses mixture as a sauce. If u like I after spreading on salmon. Just before baking or frying coat well with pinko breadcrumbs seasoned with salt n sometimes Romano grated cheese. Happy new year to all.

Love the maple glaze idea im gonna have to try that.
if theres an Academy Sports near ya they sell cedar planks that does make a BIG DIFFERENCE

I cook it two different ways. The first way is simply with the salmon seasoning. It's made by Tones. It is mainly salt, pepper, dill, and lemon. I pretty much use it as heavy as a rub. The other way is make a marinade of soy sauce and brown sugar and let the salmon marinate for an hour or so. It basically creates a sweet glaze which is amazing.

I've never done it myself, but when I was a young un, my step dad would cook whole salmon in the dishwasher. Wrapped in foil with lemon and some seasoning, lay it on the top rack and run a cycle with NO SOAP. I never paid attention to the specifics but I remember this being a big hit a dinner time.

marinade for pinkfish.
