This will be a first for me. I have a Weber 22.5. My question do I use the indirect method with coals on both sides or do I Bank the coals to one side. or does it make any difference.
Next question last Thanksgiving someone said to use a cheese cloth soaked in butter to put over the Turkey Breast. When do you do that ? When you first start, half way through or toward the end.?

I'll let somebody else answer the kettle question. I've never done a Turkey on one.
I get the bird all rubbed up with my spices, in the cavity, under the skin and on the outside. Put some butter under the skin.
Put the bird on the smoker and cover with a butter soaked cheese cloth. You'll have to keep basting it with butter throughout the cook. Don't let it dry out.

I've never done a turkey on my kettle but I would think just to one side. You may not have enough indirect space in the middle if you put charcoal on both sides. Guess it depends in the size of the turkey

Labor Day turkey
Wow! did it turn out nice sorry no pictures, Learned a trick from the Weber Cookbook, which was place the Turkey breast down in the pan the first hour and half I chopped up celery, onions, and carrots to put on the botton of the pan, with the juices draining onto the bottom of the pan, then I turned it over for the last hour and a half with the cheesecloth soaked in butter.
