Taco Cabana taco meat recipe

I love the taco meat that Taco Cabana has but I have not been able to duplicate it. Anyone have a recipe?

They buy the meat from Sysco or another purveyor, it already comes in 10 lb vaccum bags marinated and preseasoned for consistency although the purveyor may actually add their own signature blend of spices for them. Had a restaurant for a couple years and bought a lot of fajitas like that, my favorites were the Hausman brand of marinated fajitas, awesome stuff. Do a search for fajitas here, there was a recipe on here a while back with soy soy sauce and other stuff, really good recipe imo.

Sometimes it is more simple than one thinks

1½ lbs. gr. beef or use top sirloin cut into thin bite size for carne type
12) 6” corn tortillas warm
1/4 onion large diced or more
1 cilantro leaves bunch chop
either radishes or cucumbers sliced up
limes
salt ñ pepper to taste
4 Tbsps. canola oil

Garnish with
Pico de gallo guacamole a roja (red or verde salsa (green
radishes ñ cucumbers lemon wedges

Bowl large enough to hold meat ñ turn- add meat -season with salt ñ pepper to UR liking
Squeeze lime juice all over meat- turn meat over ñ over again till it’s evenly coated with the juice- cover chill meat 30 minutes.

Large skillet on high –heat oil - add some of the meat ñ sauté till cooked through (if using carne meat or the sirloin tip cook about 1 minute or so or cook ground as U like –remove ñ repeat process with rest of meat.

Heat n warm the corn tortillastill soft ñ serve tacos by placing 2 tortillas on top of each other-add desired amount of meat –spoon on pico de gallo- guacamole-a roja or verde salsa. Top each taco with onion ñ cilantro Garnish with wedge of lemon to be squeezed over taco’s to eat. Can serve with radishes or cumbers sliced or diced also.
