I have made three batches of Bread and Butter, and Dill pickles, looking for something different, any ideas.

I keep a jar of these in the icebox I love 'em.
One gallon of whole sour pickles (suggest Best Made Brand sour pickles Available at Walmart)
One four pound bag of sugar (2.5# for less sweet)
One two ounce bottle of Red Pepper sauce like Tabasco or Trappys
One twelve ounce can of jalapeno slices
Drain the pickles and discard the sour brine.
Cut the pickles into slices or spears or whatever suits you.
In a large mixing bowl, combine the sugar, Red Pepper sauce and the juice from the jalapenos.
Alternately spoon sugar mixture and pickle & jalepeno slices back into the jar untill it's all in there which takes a little pushin' and
packin' towards the end.
During the next couple of hours, turn the jar over every few minutes to agitate the sugar and help it disolve.
The pickles will give up enough new brine to totally disolve the sugar over the next couple of hours. Stick'em in the 'fridge
and in a couple of days they'll be ready!
They should stay refrigerated when not actually gettin scarfed!

I purchase several items from these folks and have been very satisfied with them.
To answer the original poster I just let my imagination roll. I'll put crushed red pepper, A clove of garlic. Fresh Dill, etc in anything. last year i was making B&B's and cut a couple of slices of jalepeno's and threw in the bottom of each jar. then i said, what the heck, how about some Bread and butter jalepeno slices; they were great. I then made some sweet dill pickles with Jalepeno's in the bottom of the jar. Just have fun.

I didn't invent this...stole it off that Scandinavian TV chef, but it's fast, and it really really works.
For the vejables, you can use a cucumber, a thin-sliced carrot, some cabbage, fennel, bell pepper of any color, or any combo you want.
Get a glass jar and pack it with your vej of choice cut into appropriate slices. I often re-use pickle jars. Then add:
1 tsp. salt
1 tsp. sugar
3 tsp. mustard seeds, crushed a little
3 tbs. apple vinegar
Shake vigorously for a while. Refrigerate for a couple of hours. Pickles!
You can also add a hot dried pepper if you want that sort of thing. Sometimes I do.

Thanks BluDog....knew a guy that made those and I Loved 'em. Only difference is, he added a few cloves between the layers of slices.
