Kingfish?

Went fishing today and caught a couple of king mackerels. Everything I've read says to only eat fresh and not to freeze or else it will turn mushy. Need some quick, simple ideas how to cook this up as I am on vacation with limited resources. Also, how should I store it until its ready to cook? Currently, I have the filets in an aluminum pan with a gallon ziplock of ice on top of them. Need some quick suggestions! :)

Freeze it in milk or buttermilk and it will be good for 4 - 5 months. Grill like steak or chunk it up and fry. Good either way. Enjoy.
