Carolina style sauce

Postby bsooner75 » Sun Jan 22, 2012 3:39 pm

Anybody got any suggestions for a good Carolina style BBQ sauce? Doing some pulled pork coming up and would like to give Carolina style a shot. Preferably something I could find in the Dallas area.

Thanks!

Easten NC vinegar sauce or Western NC with some tomato, then there is South Carolina mustard based sauces? Decisions decisions, to be honest I make my own and it is very good I have posted it here and those that have tried it really like it. I like the western NC style which has a little tomato in it. I also like the SC mustard based sauces on a PP samich with a little slaw. I have never seen a NC type sauce for sale i gues because it is easy to through together.

BLU'S PIG JIUCE
(W NC style)
Ingredients

1 1/2 cups cider vinegar
10 tablespoons ketchup
1/2 teaspoon cayenne pepper, or to taste
1 1/2tsp red pepper flakes
1 tablespoon white sugar
1/2 cup water
1 tsp salt
1/2 tsp black pepper

Directions
In a small saucepan over medium heat, stir together the vinegar, ketchup, cayenne pepper, red pepper flakes, sugar, and water.
Simmer for 15 minutes, or until all the sugar dissolves. Season to taste with salt and pepper. Remove from heat, and let cool. The longer it sits the better it gets.

SC Mustard Vinegar Sauce

1 cup apple cider vinegar
1/2 cup Yellow mustard
1/4 cup onion finely minced
2 cloves garlic pureed
1/2 teaspoon black pepper
1 tablespoon Worcestershire sauce
1/2 cup brown sugar
1/4 teaspoon cayenne pepper
1/2 teaspoon salt
1/2 teaspoon Tabasco sauce

Combine ingredients and simmer for 15 minutes, stirring occasionally.

For a smoother sauce, blend on high for a few minute
Never met a cow I didn't like with a little salt and pepper.

Now I am completely confused :) I think my only option is to try one on this butt and one on the next.

Thank you for the reply.
