I am trying to make some dinosaur beef ribs any tips ??? i am afraid to ruin good beef please help . i will be smoking them .

Wet the surface with Worcestershire simple salt & pepper rub smoke with mesquite.
Never met a cow I didn't like with a little salt and pepper.

I've done beef Dino ribs and they are anything but short. More like Pork Spare Ribs but Beef. If you really want to get caveman, go bison. Back to Beef Ribs: I treat them like pork spares. In any case, use your rub of choice and slow smoke till done. Don't worry about ruining them. If you can't get pass that then do 3/2/1 method. (3 hours in the smoke, 2 hours in foil, then 1 hour back in the smoke)
