Homesick for Tablitas!!!

We recently relocated from Texas to rural, eastern Tennessee so I can attend medical school. My family is homesick for some tablitas from La Michoacana!!!

The carnicerias I have been able to locate look at me like I'm dumb when I ask about them - starting to think they are a TX delicacy :cry:

I'm looking for some help on the marinade, specifically - I can get a butcher to cut the ribs...but I've not been able to anything in connection with the marinade they use other than it may contain pineapple juice and fajita seasoning (Fiesta brand specifically).

Short of having family ship us some, not sure what else to do...any thoughts out there on the "recipe"

I would appreciate any help you have to offer!!

I don't have a recipe for you, but could you do me a favor? If you find a good BBQ joint in TN, let me know.
My in laws live in Lynchburg and every time I go up there I drive around looking for BBQ and have not found anything worth a darn.

4 guajillo chilies roasted seeded peel of skins ñ stems
1/4 lime juice fresh
2 T. red wine vinegar
2 T. cumin powder
2 tsps. Mexican oregano powder or little less or to UR taste
1 tsp kosher salt or to taste coarse
1/4 teaspoon black pepper
4 garlic cloves mashed or roast them also YUM

1 bay leaf large ( DO NOT PLACE IN BLENDER

Blend all ingredients EXCEPT bay leaf in blender 5 minutes. If sauce is too thick - add an additional tsp of vinegar ñ a tsp of water at a time.
Pour sauce in pan with bay leaf now- cook on low 20 minutes –stir often.
Let sauce come to room temperature ñ then marinate fav meat in this 2 hours up to 6 hours. :D

If you can get the butcher to cut to your specs, McCormick season all and lemon pepper is all you need to make some great tablitas. Add some more garlic and onion powders, or just more garlic powder, all their rubs are strong on garlic.

I know this is a very late reply, but I saw this video by Chef John. He called it Korean style beef short ribs and his marinade uses pear, garlic and ginger. I'm sure you could substitute a more traditional fajita marinade with a sweet fruit to make it Texan.

I see tablitas in my local meat markets, but never really tried making them. When I saw this video, I thought "This looks good"

Maybe they just don't refer to them as "tabiltas?" Can you not see them anywhere in the meat counter? My La Michoacana calls them "Costilla de res Marinada." Good luck - they are some of my favs!

I went to the michoacana today and the guy told me they marinate them in pineapple juice and this fajita seasoning
