The Pork Chops that Wasn't !
I need a recipe for these "supposed to be" bone in pork chops that were at the bottom of a value family pack.
The 4 pork chops on tope were beautiful but these were not. So I need a recipe for fixing these.
They are all cut and torn and not in any kind of steak or chop shape.
All suggestions (besides throwing them away) is appreciated.

Slice into fingerlings - Shake-n-Bake..... seriously. Add some of your favorite rub to the mix.

This tastes great with pork steaks.....I think it would be good with your poor chops....
1/4 cup butter
1/4 cup soy sauce
1 bunch green onions
2 cloves garlic, minced
6 pork butt steaks
Melt butter in a skillet, and mix in the soy sauce. Saute the green onions and garlic until lightly browned. Place the pork steaks in the skillet, cover, and cook 8 to 10 minutes on each side, Remove cover, and continue cooking 10 minutes.
I have substituted white onions for the green ones before, and it still came out fine.

I am not real sure. I would be making a trip back to the store and ask the butcher. Just what cut this is. I like our Mexican store just for that reason, they have an old type market. You can pick and choose. CF

shredded pork. almost like pulled pork but not quite the same. here is a recipe i stole from cooks dot com
hredded pork for burritos, made with pork loin, seasonings and garlic, then assembled with tortillas and toppings of your choice. Tasty burritos are made with shredded pork.
Ingredients:
1 pork loin roast, about 3 to 4 pounds
1 teaspoon salt
1/2 teaspoon pepper
2 medium cloves garlic, minced
1/2 cup water
4 to 6 flour tortillas
shredded Monterey Jack cheese, optional
.
Topping Suggestions:
chopped seeded tomato
diced onion
shredded lettuce
sour cream
guacamole
shredded cheese
sliced ripe olives
Preparation:
Place roast in a crockpot sprayed with nonstick cooking spray. Sprinkle with salt, pepper, then add minced garlic and water. Cover and cook on LOW for 9 to 11 hours, or until pork roast is very tender. Lift pork out of crockpot with slotted spoon. Shred and serve with warmed tortillas, with dishes of shredded cheese and your choice of topping ingredients at the table.
granted its for a larger serving. but i think you'll be able to easily reduce it for your needs

Season your scraps with Garlic Salt,Paprika,Coriander,Paprika,Texas Pete HotSauce or similar stuff,Comino,Cilantro,Black Pepper and Flour. Brown in some Olive Oil and add a large can of Tomatoes ,Onions ,Garlic, Jalapenos and simmer till pork chop cuts easily with fork. Serve with some Rice with a can of Rotelle or make your own salsa,and or Mashed Potatoes. That will put the Lead back in your Pencil right quick.

Thanks for all the suggestions - - - there's no doubt that I posted this question on the
right Forum. All of them sound great but I'm leaning towards the Carnitas or Chili Verde.
CF, normally I would have taken the "mess" back to the store but this was a case of not realizing the problem until it was too late to return and the store was not a local one.

Maybe a little late, but chicken fried (yankee name "country fried") with cream pork sausage gravy... a couple fried eggs and some shortening biscuits sound like Sunday breakfast around here.

Use those chops as stir fry-or make some soup n discard the fat.
Use as tacos or add some bacon n drain fat n make chili.
Use in beans with bacon -onion- roasted gr. chilies n the rest of ingredients.

I've bought ribs in the "value pack" only to find that someone chopped off the ends of the rack to fit the Styrofoam tray and then stuck them under the racks. Now I only buy ribs in Cryovac or out of the case.

I agree - - - I lived in my home town where I grew up and I knew the butchers and everyone so I never had to worry about getting what I paid for but nowadays I only buy meat that I can see both sides of - - - unfortunately that means passing up some of the, so called, "Value Packs". I guess you're never too old to learn, huh?
