Crockpot Recipies
Since I am on the road now I am looking for some easy crockpot recipes. I will be buying a crockpot in the next few weeks and figure this will be alot cheaper than truckstop food.
Looking for some simple stuff like spaghetti, chili, etc... Stuff with little prep work as alot of prep will be hard to do in a truck.
As far as spaghetti, I figure I can make sauce at home and freeze it. really just need to figure out a way to cook the noodles without making them mushy.
Anyways... Whatcha got???

I agree, it's the total crock pot meal - - - no sides needed
OH, and any leftovers just add some liquid, broth or soup and call it beef stew.

You running the crockpot in the cab of the truck? If so, get those crock pot liners -it'll make cleanup much easier.
I've seen slow-cooker meals in a bag in the frozen food section but haven't tried any of them yet. I use mine for beans, marina sauce and Wassail -not the best choice if you're driving.

Roast Chicken & Taotes
Cut 2 tatoes in 1/2 length wise and place on the bottom of the crock pot.( they make your roasting rack) Season the chicken with season salt and pepper place on top of the tatoes set the crock pot to low and cook 6 hrs. Use left overs for chicken salad of *crock pot Põllo & Chile Verdé Enchiladas the next day.
* assemble like a lasagna
Lasagna is doable too, use little extra sauce when you assemble it so the pasta cooks.
Nothing like a big pot of pinto beans, You can by Corn Bread pretty easy on the road for almost nothing.

set on low for about 6 hours
Waaaalllllla shredded pork tacos.....and they are outstanding.

Yeah... Im gonna buy a med size crockpot and cook while I'm driving. I will prep and get it started while I'm waiting to leave in the morning and it would be ready when I stop that night.
And the liners are as must! I always use them at home!

When I drove OTR, I bought a little Sunbeam grill that used charcoal. Made some killer steaks on it while waiting for a load.
Just drop the trailer and pull forward about 5 feet or so, set it on tandems and fire that bad boy up. I don't think I made any flat spots on the tires.

Get the large oval crock pot. Less chance of spilling. Pork butt, large onion, 1/2 bottle of your favorite bbq sauce, 1/2 can of beer. Buy prepared coleslaw from chicken places or grocery store deli and white bread buns. Roll of paper towels. Enjoy! Those liners are the way to go. Keep us posted on your success.
