Point is ~ we all are sharing ideas ñ helping someone who asked for help. No offense to anyone

Have a Great "Happy Father's Day to All MEN out there" on Sunday.

“Some Ideas a little late but for the next time maybe”. Bettter late than never

1~ Jalapeño poppers on the smoker or fritters to start out the meal

2~ Roasted Vegetables with Habanero's Salsa or just roasted vegetables with jalapeno or serrano peppers or roasted green chili peppers ~ corn chips- or dip raw other veggies in it or add to any dish.

3~Pitta bread with stuffed smoked or roasted veggies ñ dressing of choice

4~ whole wheat pita with vegetarian refried beans –avocado slice –salsa-smoked cheese or crumbled cheese ñ cilantro.

5~ Smoked corn on the cob or smoked corn chowder

6~ Smoked eggplant ñ green ñ red bell peppers sliced ñ layered-black olives sliced lasagna with other veggies ñ
A sauce made with tomato~ little tomato pasta- lots garlic-onion- -bay leaves -fresh basil-salt ñ pepper-Italian seasonings to taste- fennel powder a touch ñ some red crushed peppers flakes to taste ñ romano cheese to the sauce ( takes out the bitter without adding sugar –I never never add sugar to my sauce.
If they eat cheese add a layer of ricotta with little lemon zest ñ lemon juice –salt –pepper ñ garlic to taste ñ mozzarella on top.
(If this wasn’t a vegetarian eating I make with pepperoni slices diced fine (which gives that nice zing –meat of choice ñ my other ingredients. Sausage out of the link or cut into circles –beef –chicken ñ etc.

7~ Twiced baked potatoes smoke these or do by micro

8~ Veggie Oatmeal Loaf is really Good

Some Recipes
~Chile Rolls YUM Awesome~
6 Flour Tortillas
2 poblano chiles diced or use roasted anaheims or mix in jalapeño’s*
6 slices manchego cheese
6 green onions sliced
2 eggs
1 c. Panko bread crumbs
1 c. oil for frying

Lay tortilla out flat ñ add with chile- cheese ñ green onion. Roll up secure with a toothpick just to make even with tortilla. Beat eggs with a fork- dip rolls in egg – Panko bread crumbs. Fry in HOT oil until golden - drain on paper towels

Note~ Mix jalapeño seeded ñ diced fine with either poblano’s or
Just use jalapeño’s diced fine.

Serve on platter 3 per person with some fruit ñ romaine lettuce –gapes ñ lemon or lime wedge.

Note~ can add some corn or black beans to this drain ñ rinse both well


~Baked Kalamata Olives~
1/3 lb. kalamata olives
1/4 tsp. fennel seed lightly crushed
1 strip orange peel
1 garlic clove peeled smashed
1/2 c. red wine or enough to barely cover olives

Preheat oven 350 F..

Combine all ingredients in an ovenproof ramekin. Bake until olives are hot- about 15 minutes. Cool 5 minutes before serving.


~Loaf for Vegetarians
2 c. water or chicken broth (again depending if Vegetarian will do
chicken broth
1 tsp. salt
1 c. lentils
1 small onion diced
1 c. quick cooking oats
3/4 c. cheese (cheddar Swiss Jack or american grate
1 egg beaten
4 ½ ozs. spaghetti sauce (or 4½ ounces tomato sauce
1 tsp. garlic granular
1 tsp. sweet basil dried
1 T. parsley dried
1/2 tsp. seasoning salt
1/4 tsp. black pepper

Add salt to water ñ boil in saucepan.
Add lentils - simmer covered 25-30 minutes- until lentils are soft -till most water is evaporated.
Remove from fire.
Drain- partially mash lentils.
Scrape into mixing bowl -cool slightly
Stir in onion- oats with cheese until mixed -add egg- tomato sauce-garlic- basil- parsley- seasoning salt ñ pepper-mix well.
Generously sprayed with Pam ñ pour into pan.
Smooth top with back of spoon.
Bake 350 ° F. 30- 45 minutes until top of loaf is dry- firm ñ golden
Cool in pan on rack about 8 or 9 minutes.
Run sharp knife around edges of pan – place on serving platter.

~Rolled Stuffed Zucchini Rolls Yum Appetizer or Snacks~

4 zucchini small trimmed
olive oil to brush ñ drizzle with
1 c. ricotta cheese
Little accent
Dash garlic granular
Dash sweet basil dried to UR taste –go slow
Dash of red crushed pepper flakes or jalapeño seeded diced fine Opt.
1/2 lemon juice ñ some zest
x-virgin olive oil
salt ñ pepper
5 T. pine nuts toasted or sesame seeds
Balsamic vinegar to drizzle

Slice zucchini lengthwise use a mandolin into thin slices ñ about 40 good strips.
Place strips on oiled flat plates ñ brush with oil- season with salt-.
pepper ñ accent.

Start ricotta cheese ñ mix in bowl together with lemon –juice –zest to UR taste- garlic ñ sweet basil –accent-pepper flakes or jalapeño’s IF USING ñ toasted nuts or seeds. Taste ñ adjust seasoning if needed.

Place small teaspoon of ricotta mix on 1 end of zucchini strip ñ rollup.
Drizzle with little olive oil ñ balsamic vinegar. Stand up on plates ñ serve.

~Baked Raisins ñ Apples Delicious~

6 large apples
6 T. bread crumbs
6 T. dark brown sugar
2 T. butter melted
3/4 tsp. cinnamon
1/4 tsp. nutmeg
2 T. raisins
1½ c. boiling water

Preheat oven 375 ° F.

Wash ñ core apples- arrange in greased 9”x 9”x 1¾ ”bakind dish

Combine remaining ingredients EXCEPT water- use mixture to fill apples.

Pour boiling water around apples (use more if necessary to make ½”inch deep. Bake 50 minutes or tender- basting with syrup in baking pan.

Serve hot or cool with whipped cream or ice cream if desired.
A mistake is sometimes a great creation

My stepdad is allergic to beef. He will eat the heck out of some pig or yard bird though:)
