Wow that's some puff! Crazy those allergies.
I used to have a reaction to beans (no really) and to cayenne pepper but for whatever reason in the past year they have both gone away.

I do them whole or fileted.

Put them in foil with onions/bells/jalepenos/fresh garlic. A blop of butter (not margarine!!) salt and pepper, close it up and smoke.

Depending on your temp about 30 minutes. You do not want to cook them to long or you get mush. I do this to all kinds of fish, cats,crappie,stripers,black bass and always turns out good. I will also sprinkle a little smoke paprika on them as well sometimes.

Thats it, I'm taking some fish out of the freezer for the weekend!!

You are basically doing a fish "en papillote" http://en.wikipedia.org/wiki/En_papillote

Not going to get any smoke on the fish all wrapped up but I like doing en papillote

I have tried Salmon done like that before and it was De-Li-Cious.

I'll have to try that on the smoker. Maybe pop a few holes in the tin foil on top to let some smoke flavor in?
