If memory serves Toby i took a bag of mexican cornbread and mixed it per instructions but went light on the milk to make it thicker then added diced onion and jalapenos and deep fried, but thats from my memory so no promises, Good Luck

Not what you are looking for and not heart healthy but thought I would share. Just wrapped some frozen tater tots with bacon and grilled till the bacon was done :D

Here's my wife's recipe. I highly recommend it.
Hushpuppies - Katherine's recipe.

1 cup cornmeal
1/2 cup sifted all purpose flour
1 1/2 teaspoons baking powder
3/4 teaspoons salt
2 Tablespoon minced onion
1 egg
2/3 cups milk

Sift dry ingredients together
Add onion
Beat egg, add to milk. Stir together and add to dry ingredients.
Stir up and drop by teaspoonfulls in hot fat or oil.

Hey Toby,

Here is the recipe that our chef in our Candaian Lodge uses for shore lunches. I always like to throw in a little chopped jalapeno as well.

HUSH PUPPIES
1.5 c cornmeal
.5 c flour
1 tbsp baking powder
.75 tsp salt
1 tsp sugar
1 egg
.75 c mlk
3 tbsp finely grated onion
oil for frying

Combine dry ings. add onion.
In another bowl, beat egg till frothy. Stir in milk.
Blend wet & dry ings.
Allow to set for a few mins before frying.

Deep fry in tbsp. portion size, till golden.
Drain on paper towel. Serve hot.
Enjoy.
