OK I got these Angus choice short ribs now what should I do with them.

Seriously, I've never seen a hunk of short ribs that big. I'm thinking you're going to need to cut them down. Got a bandsaw?
BTW, Safeway in town had whole Fresh Hams averaging about 18 pounds today. I'm still thinking about them.
