Beans on smoker

Anyone ever cook pinto beans in an iron pot inside a smoker before? If so, how did you do it. I want to do this next weekend but I don't have a side burner and my firebox is not flat. I thought I would try it inside the smoker but have no idea how long it will take. Any suggestions would be appreciated.

i understood them to not get hot enough, perhaps a food safety issue.

I would think the bean's would boil, if you were smoking above
212°. Now you gonna end up with a real smoked pot, might be hard to clean. CF :D

Beans will get hot enough in a smoker. The problem is how long it takes the pot of beans to get out of the danger zone ( above 140° ) according to the Health Dept. Keeping them warm in the smoker is OK.
I've cooked them for myself in the smoker, but I wouldn't cook them in the smoker if I was serving them to a group or catering. However, I would keep them warm in the smoker after they were cooked.

By iron pot if you mean cast iron they will turn very dark (black to almost black) In any case they will take on way to much smoke flavor unless you wrap the pot very tightly in foil. My suggestion would be to pre-cook at home and warm covered in a foil roaster or pot in the pit. Another option would be to cook them over coals on something such as a grill with the lid removed if ground fires are not allowed.

The main problem with that is having to Wrap each one of them the last couple of hours to Tenderize them .
I got First Place in Every Cook Off I ever Entered.
But the Judges most of the Time Gave the Prizes to Someone Else
