Anyone have a recipe for Alligator Tar Tar?

Just a white hot cast iron skillet, Cut to approx 1" cubes. Season with much pepper and cajun spice. Drop and turn 30 to 45 seconds each side in skillet. Serve with a thick dipping butter sauce.

Blackened gator tail is much better than fried.
