Pea Salad?
I really kinda toss mine together and Im curious how yall are making yours?

Here some to ponder over..
Layered Pea Salad
fresh or frozen peas
take a layer of lettuce- top it with some mayo or ranch whichever you prefer* or see note
layer of peas
chopped very finely or slice onion with chopped green pepper
shredded cheese or cubed
freshly fried smoked bacon crumbled or bacon bits
REPEAT layers
Note* ~Make a dressing of mayo-little apple cider vinegar- little sugar -touch of yellow mustard -salt -pepper-garlic granular with drop of milk mix well - chill really cold - serve on the side or place between layers. This is sweet n tart tasting

Very simple Pea salad
canned peas drained
onion chop fine
finely chopped American cheese (yellow -or cube or use a Pepper Jack cheese or Smoked cheese
miracle whip or mayo
refrigerate

2 cups frozen tiny peas
1/2 cup sour cream
1/2 cup mayonnaise
2 teaspoons dried dill weed
2 tablespoons finely chopped onion
4 tablespoons finely chopped celery
3 slices bacon fried until crispy
microwave peas until cooked..drain and let cool completely.
fry up the bacon while the peas are cooling, then crumble it up. After the peas are cool, mix everything together, and top with crumbled bacon...this is even better the NEXT day

or use Ranch Dressing or sour cream n mayo -add some fried bacon -cubes of cheddar cheese-mix in cauliflower or broccili with Romano grated cheese -garlic- red thin sliced onions- mushrooms.

Can add hard boiled eggs chopped or add some dill or sweet pickles cut up to pea salads

Peas ñ Asparagus
8 asparagus cut into ½ to ¾ inch lengths
1/4 lb. snap peas or sugar peas
1/3 to 1/2 red orange or yellow pepper. Julienne (thin match stick size pieces
1/4 red onion minced
Garlic crushed ñ minced fine (optional
1-2 T. butter
salt ñ pepper to taste
•Bring a pot of salted water to boil.
Meanwhile prepare a bowl with water ñ ice to put asparagus in after they are blanched.
•Once water is boiling- add asparagus ñ cook about 2 minutes.
Drain asparagus - place in ice water (they should still somewhat crunchy.
• Heat butter and olive oil in a frying pan on medium heat.
Add onions with garlic. Cook until onions begin to become clear
• Add peas. Cook but leave slightly crisp.
Add asparagus- toss to coat.
•Season with salt ñ pepper.
Cook until hot but still somewhat crisp.
