Kielbasi and sauerkraut.
I am looking for a awesome recipe for this. I usually braze my kielbasi and then put in a loaf pan pour a jar (not canned) sauerkraut over and smoke in hickory. It's plain and simple. I love it but the wify hates sauerkraut. Any ideas on or help in taking out the sour?

Yep, Put your sauerkraut in a colander and rinse it off under running water and let it drain. Slice a couple of stalks of celery into ¼" pieces and mix into the Kraut. Put the mix into your pan over the Kielbasa and add ½ cup white wine (I use Rhine wine). Cook until the celery is tender. She will love ya.

I agree 100 percent. If you care to get fancy, saute some sliced celeriac (celery root) and sub for the sliced celery.

Been making this way for many moons n all love it eat alone or over mashed potatoes.
Like everyone RINSE kraut well drain
Use couple large ribs of celery with some leaves good way to use leaves up.chop
Large onion chop well
garlic depending on how much U are making -chop it or use garlic
chicken broth with water
1-2 large bay leaf n remove when ready to serve
Black pepper-little Accent or if salt is needed ADD THE SALT WHEN READY to serve.
add some browned country style pork or use pork roast n keilbasa browned with all those dripplings in the botton of browning in their own juices.
Now, here is what Makes this not sour n Extremely delicious
add 1/4 to 1/2 cup pearl barley.. Check once in awhile to see if U need to add more water..n want to stir all to the bottom ..this should come out not like soup or thick thick paste just like consistency of hmmmmmm maybe alfredro sauce..with the broth thickens it's self from the barley..
UR wife will love this!! The pork n kielbasa with the barley just makes this delicious.
Add more black coarse pepper if U want also at serving time (only if needed
