Lebanese shishkabob

I was out to dinner with a friend lastnight and we went to a Lebanese restaurant locally. It was really great. I had a grilled shiskabob of beef that had been marinated in something. Anyone have some genuine Lebanese/mid eastern shiskabob recipes with marinades?

The basic mid-eastern arabic spices, at least to me, are Allspice, Cinnamon (Cassia), Cloves, Nutmeg, Fenugreek, Fresh ground Black Pepper and Ginger. Some times you'll also see Black Mustard seeds, Cardamon and Tahinni (sesame seed paste). Nearly always Olive Oil is the lipid.

Breads are usually flat breads, akin to a pita. Hummis (ground chickpeas + Tahinni) is a staple along with cous cous. If you a Middle-Eastern grocery in your area they will be sure to have premade seasonings/mixes akin to hamburger helper etc.

Beef and pork are seldom used as the meat. What is more common is Lamb and poultry.
