Individual Cheesecakes Makes Great Christmas Gifts
This recipe makes some nice cakes for the table or as a gift.

14 vanilla wafers
4) 3 oz. pkgs. cream cheese, softened
2/3 c. sugar
2 eggs
1 tsp. vanilla extract
3/4 c. commercial sour cream
1/4 c. sugar

1 can strawberry or favorite canned pie filling or any pie filling u like.
Line muffin pans with paper liners. Place a vanilla wafer in each cup. Set pans aside. Beat cream cheese with electric mixer until light and fluffy; gradually add 2/3 cup sugar and mix well. Add eggs and vanilla, beating well.
Spoon mixture into liners filling 2/3 full. Bake at 350 F. 10 minutes. Cool.
Notes~ wrapin colored cellopane paper with ribbon in a basket with other little food goodies.

Easy Cheesecake
2) 8 oz. pkgs cream cheese, softened
1/2 c. sugar
1/2 tsp. vanilla
2 eggs

1 graham cracker crust

Beat cream cheese, sugar and vanilla on medium speed with an electric mixer until very well blended. Make sure all the cream cheese gets mixed in well. Add eggs and mix. Pour into crust and bake at 350 F. about 40 minutes. Refrigerate 2 to 3 hours. 8 servings.

Lemon Cheesecake

1 pkg. Scotch finger biscuits
3 large pkgs. Philadelphia cream cheese, softened
1 can condensed milk
300 ml whipping cream
1 pkg. lemon jelly crystals
1/2 cup boiling water
juice of 2 large lemons
zest of 2 large lemons
extra cream to decorate (optional

Spray a medium sized deep pan with oil. Layer the biscuits on the bottom of the pan to form the crust. Dissolve the jelly crystals in the boiling water; stir to ensure they are completely dissolved and allow to cool.
Cream together the cream cheese, condensed milk and lemon juice. Gently mix the cooled jelly mix into the cheese mixture, mixing well.
Whip the cream until stiff and gently fold through the mixture. Add lemon zest, stirring gently. Pour the cheese mix into the pan. (Don't stir too much or shake it up; the air whipped in keeps it light.
Refrigerate overnight. Decorate with whipped cream and decorations of your choice.

Blueberry Cheesecake

1 can of blueberry pie filling
1) 8 oz. pkg. cream cheese
1 tsp. vanilla
2 eggs
1/2 c. sugar
1 ready made graham cracker pie crust

Mix all ingredients EXCEPT pie filling until creamy. Pour into a ready made graham cracker pie crust - bake 20-25 minutes at 350 F. When cool top with pie filling.

Find gifts for Christmas of your favorite Seasoning Rubs or jars of BBQ Sauce or Chili-Jams-homemade Soups- Baskets of cooking goodies or your favorite tool used for smoker-grilling or just cooking is great in these hard times. Just add celopane -ribbon -a card n instructions if need be. Those cookies or brownies in a tin can - cheeseballs -fudge-different types of coffee or tea bags
