Grilled Plantain ala mode

Postby egghead » Fri Oct 02, 2009 3:01 pm

Grilled a little plantain last night. "Platano a la plancha"

Have to have one that has turned absolutely black - green will taste more like potatoes. If you buy some greenyuns, just leave them on the counter for a week or more till they turn black.

Sauce:

2 Tbs turbinado sugar
2 Tbs melted butter
1 Tbs lime juice
1 Tbs Dizzy Pig Pineapple Head
1/2 tps cayenne pepper

Mix it all up and baste the plantain

I sliced long ways then halved the plaintain - grilled meat down with the skin on. Pulled the skin and flipped. Grilled half of the plantain longer than the other half just to compare the results.

Blackened version :)

Both were good - I'll geaux for the blackened version next time
A little rum added to the sauce wouldn't hurt it a bit :)

Dizzy Pig Pineapple Head is a rub for grilled fruits - flavors are cinnamon and cloves

Looks great. I've grilled bananas, but haven't tried plantains yet. Sounds like a nice combination of flavors with your sauce.

Those do look great! Have tried plantains in Jamaica and various South American countries and just can't get a taste for 'em. Can I just have some ice cream? :P

Greenyuns taste like potatoes. When they turn black, they start to taste more like a banana but not exactly.
