Hj’s Cobbler

This is so good serve with huge scoop of ice cream on top. Indulge. So easy to make -quick Use any Fruit

Pre heat oven 350° F.

1 Stick of Butter
1 c. flour
3/4 c. milk
1 tsp. salt
2 tsp. baking powder
1 can Thank You brand pie filling Cherries or Blueberry or mix together ½ of one n ½ of other

Melt butter in microwave - about 1 minute ~cover so it doesn’t splatter inside of the micro - maybe more than a minute ~ in a glass baking dish- that will be used for the cobbler to be baked in oven

Mix rest of ingredients EXCEPT for pie filling all together in a bowl - until smooth with electric beaters

Pour above batter over melted butter. DON’T mix the batter ñ butter!

Peach Cobbler with Yellow Cake Mix
13 x 9 Dish

1 large can sliced peaches with juice 29.0z
1 small can sliced peaches hold juice 15.2 oz
1 box yellow cake mix.

Pour large can of peaches in dish and small can of peaches but
HOLD JUICE on small can add yellow cake mix then pour small can
of juice over mix cut one stick of butter in squares on top of
cake mix Bake at 350° F until Golden Brown.
Enjoy with or without ice cream

Add~ Your favorite using one can of Pie filling- Thank You brand Blueberries or whatever fruit you like - on the top of above batter. I mix n match pie filling sometimes using different pie fillings together sometimes. But it must equal only one total can of pie filling

Bake 30 to 35 minutes or until knife comes out not sticking.- uncovered Serve Hot or cold with vanilla ice cream.

Coconut Peach Cobbler
You can make all the components ahead and assemble them at the last minute 16 servings

Crust::
2 cups all-purpose flour (about 9 oz) 3 tablespoons sugar
1 tablespoon baking powder 1/4 teaspoon salt
1/2 cup flaked sweetened coconut, toasted
6 tablespoons chilled butter, cut into small pieces
1/2 cup evaporated fat-free milk
2 large egg yolks

Filling:
11 cups sliced peeled peaches (about 4 pounds)
1 cup packed brown sugar
6 tablspoons all-purpose flour
1/4 teaspoon ground nutmeg
Dash of salt
Cooking spray
1 tablespoon granulated sugar
To prepare crust, lightly spoon 2 cups flour into dry measuring cups; level with a knife. Combine 2 cups flour, 3 tablespoons granulated sugar, baking powder, and 1/4 teaspoon salt in a food processor; pulse 2 times or until blended. Add coconut and butter; pulse 10 times or until mixture resembles coarse meal. Combine milk and egg yolks. Remove 1 tablespoon milk mixture; set aside. With processor on, slowly pour remaining milk mixture through food chute; pulse 5 times or just until blended. Gently press mixture into a 6-inch square on heavy-duty plastic wrap; cover with additional plastic wrap. Chill for at least 30 minutes. Roll dough, still covered, into a 14 x 10-inch rectangle.
Preheat oven to 350°. To prepare filling, combine sliced peeled peaches, brown sugar, 6 tablespoons flour, nutmeg, and dash of salt in a large bowl; spoon into a 13 x 9-inch baking dish coated with cooking spray. Remove one sheet of plastic wrap from dough; place dough on peach mixture, pressing to edge of dish. Remove the remaining sheet of plastic wrap; brush dough with reserved milk mixture. Cut 6 (2-inch) slits in dough, and sprinkle with 1 tablespoon granulated sugar. Bake at 350° for 35 minutes or until golden. Let stand 30 minutes on a wire rack. Serve with ice cream if you like.

Sweet Potato Cobbler
2 cups water
dash salt
1/3 tsp. nutmeg
2 cups sugar
2 large sweet potatoes, peeled and diced
3/4 cup flour
3 tbsp. cold water
3 tbsp. vegetable oil
1/2 cup butter or to taste

In large pan combine 2 cups water, salt, nutmeg, sugar and potatoes. Bring to a boil. Cover. Reduce heat and simmer about 15-20 minutes or until potatoes are fork tender. Pour mixture into a lightly greased 9” or 10” pan. In a bowl, combine flour, oil and 3 tbsp. water and mix together with hands. Roll out very thinly on floured surface. Cut dough in strips or pinch with your hands and arrange over sweet potatoes. Cut butter into pats and place over cobbler.
Bake at 350°F about 35 minutes until crust is golden brown.

Old-Fashioned Sweet Potato Cobbler
2 cups cooked and diced sweet potatoes
2/3 cup molasses
1/4 cup butter
1/2 cup milk
1/2 tsp. ginger
1/2 tsp. cinnamon
pinch of salt
biscuit dough – recipe follows

In a large ovenproof saucepan or casserole, combine all ingredients except biscuit dough; bring to a boil. Roll out prepared biscuit dough. Cut part of rolled-out biscuit dough into cubes and drop into boiling mixture. Cut remaining dough in thin slices and place over top. Put the pan in oven and bake at 400°F until the crust begins to brown.

Old-Fashioned Biscuits
2 1/2 cups flour
1 teaspoon salt
1 tablespoon baking powder
1/4 teaspoon baking soda
3 tablespoons lard or shortening
1 cup sour milk

Mix dry ingredients together; cut in lard or shortening. Slowly blend in milk, just until dry ingredients are moistened. Roll out on floured cloth or surface to about 1/2" thick - do not roll thin. Cut with biscuit cutter or glass tumbler. Place on ungreased baking sheet and bake at 350°F 10 minutes or until golden brown.

Cherry Cobbler Quick Diabetic n Light

Nonstick cooking spray
2 -16 oz. each cans cherrie.. packed in water
1/2 c. self-rising flour
1/4c. white sugar
2/3 c. skim milk
1/2 tsp. cinnamon
1/2 tsp. almond extract
2 sheets- 4 cracker per sheet low-fat graham crackers
fat-free nondairy whipped topping

Heat oven to 350 …Spray 9x9 square baking pan with Pam
Drain cherries or any fruit you like n place in bottom of pan. In a small bowl . .mix flour- sugar-milk-cinnamon- and extract. Pour this mixture over the cherries
Bake for 40 minutes. Cool until just warm

Place graham crackers in a small zip lock bad break crackers into pieces ñ crush into crumbs over the cherrie. ..
Top with whipped topping if desired Serve warm.
