Yesterday I got down to the last few large lemons and decided to make some of that Lemon Rind Candy that Ric had mentioned. Nothing was hard to do but there are several steps just to have three ingredients - Rinds, Sugar and Water. However, the Wiffy liked it so therefore I am very pleased that I made it. Maybe later today I'll like it more because yesterday I did way too many test tastes during the processing and probably wasn't a good judge on the final product.
The air drying process is so important so the candy isn't sticky.
