Pineapple Upside Down Muffins

A while back my wife had made some Pineapple Upside Down Muffins (Cakes). They were pre-tty pre-tty good. We baked ours in the kamado, but oven works just as great.
Awesome for parties, get-togethers, or tailgating... easy single serving size.
