3 c. pitted fresh sweet cherries
2/3 c. unsweetened applesauce
1/3 c. sugar
1 envelope unflavored gelatin
1 c. cold water
1 tsp. lemon juice
1/2 tsp. ground cinnamon
Dash ground cloves
Purée cherries in blender. Mix cherry purée with applesauce with sugar together Soften gelatin in cold water- heat until completely dissolved. Stir gelatin mixture- lemon juice ñ spices into fruit mixture.
Pour mixture into 2 different ice cube trays or 13”x 9”x 2” pan- freeze.
After mixture has frozen- place into a large-chilled mixer bowl - beat until light - fluffy (work quickly to prevent melting.
Return to refrigerator trays - freeze until firm. 2 quarts.
