Makes 2 cups
1 medium onion finely chopped
2 l garlic cloves large minced
1 T. fennel seeds
2 serrano or 1 jalapeno pepper, quartered seeds retained if a more fiery effect is desired
2 red bell peppers coarsely chopped
1 ripe mango large pulp or flesh
2 c. chicken broth
2 T. butter
Juice of 1 lime
salt to taste
Melt butter in saucepan over medium heat - add garlic- onion with fennel seeds. Saute -then stir in peppers n mango. Cook 5 minutes before adding chicken broth. Reduce by 3/4. Transfer mixture to blender - blend ingredients on high speed 1/2 minutes.
Season to taste with lime juice n salt.
