1/2 cup butter
1 onion chopped
2 1/2 cups ham finely chopped
2 1/2 cups boiled potatoes diced
Salt - pepper to taste
Add some hot sauce for zip

Using a pan - melt 1/4 cup butter- add onion - saute
until onion is tender. Combine onion- ham- potatoes
-salt - pepper n hot sauce in a bowl - mix well. Melt remaining 1/4
cup butter in pan - spread over hash mixture in
the pan. Cook medium heat until brown on the bottom. Turn
hash over and cook on the other side until brown. The hash should
have a nice brown crust on both sides when finished.

Notes~ can add serrano or jalapeno's if u like cooking with the onions. Bell's also.
A mistake is sometimes a great creation
