Easy -Baked Portabello Mushrooms

4 large portabello mushrooms
4 shallots
1 T. x-virgin olive oil
4 c. fresh spinach
2 oz. creamy blue cheese
3/4 c. fresh bread crumbs or use Panko Bread Crumbs
3 cloves garlic minced
pepper n salt to taste
dash Accent n Romano Cheese
dash red crushed pepper flakes
fresh squeezed lemon

Heat oven 375F. or Grill these babies..Smoked would be great also.(U the experts on smok'n n grilling
Saute shallots in oil. Add spinach -toss. Stir -cook- 5 minutes or until it is wilted.
Stir in *blue cheese - let it melt. Add breadcrumbs n seasonings. Romano n squeeze lemon all over
Place mushrooms in baking dish. Spoon mixture into caps. Put in oven and bake until filling is golden.

Notes~*Any cheese smoked Gouda or Gryrue or Asiago. Enjoy
