Salsa Salsa Enjoy

Clam Salsa or Sauce Hj's

2 lbs. clams
1/2 c. white wine
2 T. x-virgin olive oil
little butter
2 T. green onions with some stems chopped
2-3 garlic cloves minced
3 to 5 serrano chilies roasted minced with seeds
cilantro leaves diced
1 tsp. basil fresh chopped or more to taste
2 T. lime juice fresh

Place clams in a large pot with wine. -(not any clam juice if using canned clams
add 1 T. olive oil - butter n garlic -bring to a boil.
Steam covered for 10 minutes to all open -discard any that do do-not open..(Using canned clams boil 1-2 minutes -both cases RESERVE the liquid -fresh clams -shell after they open - (canned clams -drain well now remove clam meat to a bowl- adding 2 T. of the RESERVED liquid- remaining oil n all remaining ingredients. Combine well

Black Bean and Corn Salsa

1 can mexi-corn, drained
1 can black beans, rinsed and drained
1 tomato, diced
2-3 green onions, sliced thin
1/4 cup FF Italian dressing - FF ?
2 Tbsp chopped cilantro
1 tsp cumin
Juice of ½ lime
salt and pepper to taste

Mix and chill. Serve with baked Scoops or eat as a salad! You can add diced bell pepper or avocado if you like!

Avocado n Orange Salsa
Makes 2 cups

1 avocado large peeled pitted chop
1 orange fresh peel seed cut into pieces
2 T. orange juice fresh
6 T. pineapple fresh chop
1 Roma or Plum tomato chop
few cilantro leaves chop
1 1/2 tsps. really hot sauce use a chile sauce

Mix together n very good with pork or quail.

Avocado Serrano Salsa
Makes 2 cups

2 avocados very large peeled pitted chopped
1/4 c. lime juice fresh
3 T. red onion minced
2 tsp. cilantros fresh chopped
salt to taste

Mix all in a bowl. Use with chips or great as a soup garnish.

Chipotle Pico de Gallo Salsa

1/4 c. lime juice fresh
2 tsp. chipotle chilies in a adobo sauce in a can minced
4 garlic cloves minced
2 c. chopped tomatoes seeded Roma or Plum
1 c. onion chopped
1/2 c. cilantros chopped fresh

Combine fresh lime juice- chipotle chilies ñ minced garlic in large bowl. Add chopped tomatoes onion ñ cilantro. Season to taste with salt. Let pico de gallo stand 1 hour - room temperature - allowing flavors to steep.Notes - More or less Chipotle to your liking -sometimes I add 1 serrano pepper ñ less chipotle

Smoky BBQ Salsa

1 c. BBQ sauce ( ur favorite BBQ
2 c. green onions with some stems chopped
2 T. chipotle chile puree (made from chipotle canned adobo chiles
2 T. molasses
1 T. pure maple syrup
1/2 c. water

1 c. corn on the cob

Put 1st group in small pan-bring to a boil-Reduce heat -cover -1 hour -stir once in awhile. Add water if sauce becomes to thick when cooking.

Cut corn off the cob- Heat on high heat a small skillet till almost smok'n -add corn kernels in layers so they can dry roast -maybe 5 minutes for each layer. You want these dark n smoky-tossing once in awhile -than place each layer that you smoke in a bowl or add to the sauce..When all corn is finished n added to BBQ -pour in a bowl. Mix well- good with chicken or steak.

Nopales Salsa

2 dried arbol chiles (break up by hand
2 garlic cloves diced
1 T. peppercorns black
2 T. corinidar cracked seeds
2 thyme sprigs
1/2 c. apple cider vinegar
some cilantro leaves chopped
2 lemons fresh juice
2 c. water

8 ozs. prickly pear pads dethorn burned off by hot grill-peel edges- diced

8 radishes dice
3 oranges peel seed cut into pieces
1/2 red bell pepper roasted seeded cut into strips thin
salt to taste
1/4 tsp. cayenne pepper or smoked chipotle powder to taste

1 st group place in water -bring to boil -reduce heat -simmer -uncovered 10 minutes ..while that is boiling- burn off the needles n such from cactus on the grill. -cool to chop cactus

Return to 1st group -by this time it is finished -strain n RETURN LIGUID to a clean pan-cooking 1 minute-Discard any solids. Now-add cut up cactus to liquid cook 1 minute over high heat. Drain n transfer cactus to large bowl. Add remaing ingredients n throughly combine.

Notes- can get cactus or called nopales at supermarket or Latin markets
This salsa is great with grilled meats n lamb..

Tequila Spiked Salsa

2 cups chopped seeded tomato
1 cup chopped onion
1/2 cup chopped fresh cilantro
1/3 cup chopped peeled avocado
2 tablespoons fresh lime juice
2 teaspoons tequila
1/2 teaspoon kosher salt
2 garlic cloves minced

Combine all ingredients in a bowl, tossing gently. 3 cups

Papaya Salsa
makes 2 1/2 cups

3 papayas peel pitted dice into cubes
1/4 c. lime juice fresh
cilantro leaves chop
couple dashes of hot sauce - chili sauce or use 1 serrano pepper dice fine
sugar to taste

Mix well together -goes great with mahi or pork

Jalapeño Mango Salsa
May 21, 2003

1 ¼ cups
1 large mango, peeled and pitted
1 kiwi, peeled and halved
2 scallions, coarsely chopped
1 jalapeno pepper, seeded and cut in half
1 tablespoon sugar
2 teaspoons fresh lime juice
1 teaspoon pure vanilla extract

Place mango- kiwi- scallions- jalapeño- sugar - lime juice ñ vanilla into bowl of a food processor fitted with the steel blade. Process until smooth 1 minute.

Cover - refrigerate 1 hour for flavors to blend.

Grapefruit Salsa

Makes almost 3 cups

3 pink grapefruits
1 navel orange
1 serrano or jalapeño chile seeded minced
1 green onion thinly sliced
2 T. basil leaves FRESH
Salt to taste

Remove the skin from the fruit over a bowl to catch any juices – remove the in side membranes from each segment. Discard any seeds. With sharp knife or shears cut up fruit coarsely – bite size will do. Add chile peppers- onions- basil – little salt with the fruit - Mix. Transfer to a serving bowl or use one to start with. Cover chill till ready to use. Great with fish.

Pico de Gallo Roasted

Onions
Cilantros
Red ñ green colors of the roasted pepper *
Tomato little chopped
Fresh garlic
Dash of white vinegar very little (optional or use plain white vinegar
Salt

Roast onions-any peppers-tomatoes-garlic in oven
chop in blender a few chops

Notes~*Include the jalapeno's or Anaheim's -Poblano's serrano or
habenaro's roast mix -or use several together

Watermelon Salsa

1 cup diced watermelon
1/4 cup diced green onion
2 tbs finely dice jalapano
juice of half a lime
2 tbs chopped fresh dill
salt and pepper to taste
a handful of fresh wild blackberries

Mix. Serve on grilled salmon or halibut, pork or lamb
