BBQ Corn on the Cob
3 T. mayonnaise or use little more
2 tsps. lime juice fresh
2 T. Romano cheese finely grated
1/2 tsp. chile powder
1/4 tsps. ground red pepper
1/4 tsp. ground cumin
1/8 tsp. salt to your taste
4 ears shucked corn
Crisco Butter Spray
Prepare grill rack coated with cooking spray- medium to high heat.. Grill corn until hot ñ lightly charred all over- 12 minutes or till tender - depending on the temperature of grill.- turning often. Remove corn from grill- brush with mayonnaise mixture n enjoy. Serve immediately
For hotter taste use chile guajillo that is a chile powder in place of just chile powder
~Notes Now- if you don’t want the charred taste to the corn. Remove the silk from the corn- soak corn with husks on in water for 30 minutes before cooking ñ add creamy sauce to corn after grilling. YUM or just roll cooked corn in butter ñ sprinkle with Romano cheese ñ serve with a lime wedges.
