They Call Me Tater Salad

Postby Down_South » Mon Mar 06, 2017 5:59 pm

The weather is already warm for March. It feels like summer. So I went through some of my mom's recipes she gave us. Found her recipe for tater salad. She wrote it by hand and there were little extra notes in the margin, etc. Anyway, we made...we ate it and the tears came unexpectedly for both me and my wife. She died 5-1/2 years ago...but eating it was like she was talking to me. I am proud to share her recipe. It goes like this:

6 taters
4 hard boiled eggs
1 jar of Heinz India Relish drained(very hard to find, Amazon has it.). It's just a mixture of sweet and sour relish.
1 cup of diced celery
1/2 to 1 small onion(optional)
2 teaspoons brown mustard
1 cup of Miracle Whip
Celery seed(she also put a little in the pot with the taters as they cooked)
S&P to taste
Adjust amounts of each above to your liking.

What tater salad recipe did your mom make?

My mums been gone 20 years and I don't ever remember her making a potato or any other salad except a lettuce salad with tomatoes and eggs spring onions and cheese.
BUT I love the sound of your one! I've never made a potatoe salad ever as well. I'm going to copy and send it to myself for later use.
Thank you for your time to print it here. I have things that take me back to my childhood as well.all good things I must say as well.
I miss seeing my mum walk up my driveway on Christmas day with bags loaded with presents for the kids.

Thanks guys. I can't think of a better side other than beans with BBQ.
