Looks like some grilled seafood is in order soon. Whooped up my first ever batch of Salsa with lemons and pineapple included - - - did a spoon test and it seemed to be what I was wanting and hopefully expecting.

one can of HEB Petite Diced Maters (drained very very good)
couple of large tblsps of Roasted Pineapple and Habenero Sauce from Sams (ran thru strainer)
2 large jalapenos (de-veined de-seeded par-boiled and finely chopped)
1/3 cup of finely chopped Sweet Own-Yawn
1/2 cup of Myer Lemon meat also strained

Looks the business oup, talking of pineapple they are 2.90 here ATM whole. I had to make some fruit platters for my grandsons birthday party on Saturday. Sweet pineapple. Doesn't get better. The kids all went to a clip n climb place , they do food but its crapola fries n nuggets. My daughter won't feed her boy that. He had fruit, sammys, lolly cake etc.

Your salsa looks like it would go with any meat, I reckon as a side with a burger would be up my alley.

I've been using that Salsa on Breakfast Tacos some but the other ennin I decided to whoop out some Fish Tacos just for me. The Salsa went well with the fish, soft corn guererros, Suckle Busters Texas Gunpowder and pepper jack
