Queso Fundido Spiked with Tequila
1/3 c. poblano pepper seeded chop can use other chile peppers
1/3 c. onion chop
1 T. olive oil
1/4 c. tequila
1½ c. queso quesadilla (Chihuahua or Monterey Jack cheese shredded
1 T. flour
1/3 c. tomato chopped fine
1 T. cilantro leaves chop fine
Preheat oven 350 ° F.
In a skillet add ñ cook onion in oil till soft – remove from heat - slowly add tequila – return to heat – simmer uncovered about 30 seconds or most tequila has evaporated ñ veggies are still moist.
Spoon mixture in bottom of a 6 or 7” ovenproof skillet or a 2 cup au gratin dish. Medium bowl toss cheese with flour ñ sprinkle cheese mix over veggies.
Bake uncovered about 10 minutes or cheese is just melted. Sprinklw with diced tomatoes ñ cilantro. Server with corn chips or warm tortillas topped with cooked chorizo . Double the recipe
