Found out I was Type 2 diabetic last December. Since then my wife has made this for me multiple times. Not to bad at all.

I am type 2 as well, have been for about 20 years( it is hereditary) insulin dependent for about the last 10 years or so; I have learned to adapt several things like pizza, by making my own, I can control the carbs to the point that I can eat it from time to time and can manage my glucose levels. Diabetes is not about doing with out, it is about learning to manage your diet, I highly suggest you seek professional education, about the management of the carbs and glucose.
